cake ideas?

ok i have to work with what i have.i just put a strawberry mix in a bunt cake tin and its in the oven.i want to put somw thing in the middle where the hole fuirt or something and on top of thae cake.anyone have any ideas of what i can do and also what kinda frosting should i use.thanks


  1. Mabey a straw berry jelly: 2 1/2 - 3 qts. strawberries 3 3/4 c. prepared berry juice 7 1/2 c. (3 1/4 lbs.) granulated sugar 2 pouches Certo fruit pectin 1/4 c. lemon juice Remove stems from berries. Crush berries one layer at a time. Place berries in dampened jelly bag. Drip. Measure 3 3/4 cups juice. Pour juice into 6 to 8 quart sauce pot. Measure sugar; set aside. Open pectin pouch and stand it in cup. Stir sugar and lemon juice into juice. Bring to full rolling boil. Stir constantly. Add pectin. Boil one minute. Remove from heat. Ladle foam. Fill hot glasses to 1/2" from top. Remove bubbles. Seal jars with hot lids. Use 20 minute hot bath. Store in cool area. Yield: 8 cups. ANd then just put it in the middle of your bunt cake and spred it with some pink stawberry icing: Frosting: 1 pkg (8oz) cream cheese 1 stick of butter 3 1/2 cups confectioner's sugar 3/4 cup mashed strawberries (drained) Preheat oven to 350°F degrees. Lightly grease three 9 inch round pans. Set pans aside. Place cake mix, strawberry gelatin, mashed strawberries, oil, milk, and eggs in large mixing bowl and beat on low speed for 1 minute. Strawberries should be well-blended. and mabey pick up some cool little decorations like little candy straw berries to put on top or real ones! Enjoy! :)
  2. How about a raspberry whipped cream? That sounds yummy to me. I had it on a chocolate cake once and it was awesome, but I'm sure it would be good on a strawberry cake too, very light and fruity for summertime!
  3. Frost with cool whip,keep in refrigerator when done. Fresh strawberries could go in the hole .Any fruit you have on hand cut small will do also.
  4. I would put berries in the middle (strawberries,raspberries,blueberries combination) Then ice it with coolwhip,nutriwhip or whipped cream. Keep refrigerated.
  5. I like healthy junk. That's what I call things like my chocolate cake (vegan with apple sauce for oil and whole wheat flour) and the frosting (sugar, cocoa and soy milk). Even though I didn't grow up vegan or vegetarian, my mom still did things like that-- fruit in the gelatin (which I won't touch now), and on cakes. If my mom made a cake (from a mix, which I won't do because my chocolate cake is easy to do and healthier and might be cheaper), we were lucky if we got frosting on it. My thought was to get some fresh strawberries (or frozen if you have time to thaw them; I prefer frozen fruits and veggies because they're frozen within a few hours of picking them) and smoosh them so you have a bit of a juice. Poke holes in the cake and pour the strawberries on top, this way the juice gets into the cake, too. I actually just thought of this when I read your question and the answers. My mom used to do a white cake and poke holes in it and pour gelatin liquid in it for flavoring. So I figured the strawberries with the juice would be similar, but healthier. I really hope this helps. If anything, I'm filing the idea away for future reference. I just don't have a vegan white cake recipe.
